Total Acid (Free Acid) of Sake Wine

The acid contained in Japanese sake wine or synthetic sake are organic acids mainly of succinic acid and lactic acid, and among them of all, total free organic acids are related to quality of sake.
Determination of total free acids in sake wine is prescribed in National Tax Bureau - 3 Sake, Synthetic sake 3-5 test method for total acid (free acid) where acid-base titration with sodium hydroxide is stipulated.
Titration with 0.1 mol/L sodium hydroxide up to pH 7.2 and obtained total acid (free acid) by converting titration volume to succinic acid in total.
